Cheesy Quinoa “Grits”

Cheesy Quinoa Grits

Among my many guilty pleasures is insta-grits.  Once in a while, though, I like to swap out the grits for quinoa.  Quinoa is a powerhouse; since it’s packed with protein, dietary fiber, iron, calcium – I could go on, but won’t – you’ll feel a lot better about starting your day with this than that slice of cold pizza. Quinoa Grits Ingredients

I like some cheddar and an egg on my grits, so that is what I’m putting on these quinoa “grits.”  If you like buttery grits, use butter.  If you like shrimp in your grits, cook up some shrimp.  The possibilities are endless.

Cheesy Quinoa “Grits”

Prep Time: <5 minutes
Cook Time: 10-15 minutes
Total Time: <20 minutes
Yield: 1 serving

3/4 cup dry quinoa
1 egg
1 oz. cheddar cheese
Small bunch parsley, chopped
1/2 – 1 tbsp olive oil
Salt and pepper to taste

1. Prepare quinoa according to stove top package directions.  When quinoa is minutes from being done, heat olive oil in pan and fry egg sunny side up until white is set but yolk remains runny. Add salt and pepper to taste, if desired.

2. Stir parsley into hot quinoa, allowing it to wilt slightly, then plate.  Sprinkle with cheddar cheese.  Place egg on top.  Serve.

  1. What a great way of using quinoa Susan! My hubby is not a quinoa fan but I’m sure he would love this dish since he adores cheese and eggs. Thanks so much for sharing 🙂

  2. Pssst! Don’t tell anyone but I’ve never tried quinoa. I just never think of it, to be honest. I tell you what, though, if anything would get me to buy some, it would be a recipe like this, cheese-laden. Your last photo, with the egg yolk spilling onto the cheesy quinoa is just about as enticing as could be. 🙂

    • Put cheese on cardboard and I bet it’d be delicious! Seriously, though, I love quinoa as a side with some veggies mixed in. Hope you’ll give it a try sometime 🙂 Thanks for stopping by for a comment!

  4. Have never tried quinoa before, but looking at your pictures make me hungry so I will give it a go, thank you.

  5. Hi chef,
I wouldn’t eat that. Well I might but it looks a little worthy. We don’t even have grits in the UK tho’ – so, y’know? America does a good breakfast, I know. I would maybe fry a hot dog with the egg if the cupboard was bare, or try poaching eggs again. Oh I wish I could make eggs benedict or have the patience to grate potato, ummm. See you later :))
